After pressing off skins the young wine was aged in special 3-year air-dried barriques. With a lifted ethereal perfume of currants, blackforest and thorny rosehips, interwoven with the dried stems of fescue grasses and dried herbs, including fennel and wildflowers, the richness of ripe plum and dark fruits enhancing the higher notes. Midway through the taste there is a sweet but gripping tannin grain with a limestone streak of minerality. Dark fruits, wild game and muscled meat, the richness still combines finesse and elegance. Bottled on the property, using the finest natural cork. Store lying down. This wine also enjoys a time to rest in a decanter before serving. Suitable for vegetarians.
